Vegan Tahini Kale Caesar Salad

Salad Ingredients:

1 Head lacinato kale (chopped)

Croutons (store bought or homemade)

Lemon wedges (to serve)


Tahini Caesar Dressing Ingredients:

⅓ c. Tahini

2 tbsp. Extra virgin olive oil (extra to massage the kale)

2 tbsp. Lemon juice

1 tbsp. Farmer Foodie Italian Herb Cashew Parm (plus more to top)

1 tbsp. Capers in brine

½ tsp. Ground black pepper

2 Cloves garlic (grated)

Pinch salt (to taste)

 

Method:

  1. Make the dressing: Whisk together all ingredients for the Tahini Caesar Dressing: ⅓ c. Tahini, 2 tbsp. Extra virgin olive oil, 2 tbsp. Lemon juice, 1 tbsp. Farmer Foodie Italian Herb Cashew Parm, 1 tbsp. Capers in brine, ½ tsp. Ground black pepper, 2 Cloves garlic (grated), and a Pinch salt (to taste), whisking in ¼-½ cup of water to thin the consistency. Taste and add more salt and pepper if desired.
  2. Massage the kale with a very small drizzle of olive oil to soften and tenderize the kale.
  3. Toss the kale with desired amount of dressing. Serve with croutons, lemon wedges to drizzle, and extra Farmer Foodie Italian Cashew Parm!
